I used to make a lot of bread, I don't so much now. My mother-in-law sent me a book called Our Daily Bread', with very detailed explanations of the different stages of bread making. The big tip was to use Vitamin C to speed up rising, but now I use instant yeast which has Vit C with it anyway. I rub the butter into the flour. Interesting how things can be done differently even in something as basic as bread making! Another tip from the book was to use 1/3 boiling water to 2/3 room temp to get the right temp for the yeast. It is fun to experiment with different flours, makes your bread really special.
